The following recipe is one i use very regular,
nothing tastes so wonderful on the taste buds in
my opinion. Remember if you are dieting as a Vegan
or Vegetarian you must have key nutritional foods
in your diet so do not use this recipe as a meal
its a wonderful side, lunch or eat as snack foods.
Sun Dried Tomatoes

1Kg Small tomatoes (plum) as many as you want
cover in olive oil,
2 to 4 cloves garlic, pressed
1 tbsp dried marjoram
1 tbsp fresh basil, chopped
Pepper lightly sprinkled.
How to prepare:
The way i do it is not outside which they would
do in Italy or Spain but by using an oven. It does
take along time so prepare this recipe for overnight
and resist the temptation in the night to pop down
and test, its very hard to do i fail regularly.
Ok cut the tomatoes in halfs and lay on a large
baking tray with the seed side up. Mix the Garlic
and herbs together and cover all the tomatoes in
Olive Oil then sprinke the herbs on top and finish
with lightly sprinkling pepper. Thats it for preparation
now how to make them look like you got them from
a supermarket. Turn on the oven to a very low heat
so its barly on, you want the tomatoes to dry not
cook so use a temperature of 90 degrees C and then
place the tomatoes on the shelves if you used more
than one tray and now the key point leave the oven
door open on a jar. This will stop them from cooking.
Leave for upto 7 hours in the oven depending on
the size of the tomatoes used. Once the Tomatoes
are done take them out and cover them generously
in Olive Oil or put them in a jar with olive oil,
they will stay fresh for a month in the fridge
like this.
